Samphire Grass

Asked for it all year round but only available May to Sept. Don't be fooled by the 'Tesco's finest' Israeli Samphire which is bitter and tastes nothing like the real finest. It's farmed in Norfolk in the UK, but we buy French Samphire, from The Baie Du Somme, just over the water (nearer to Lyme than Norfolk!) because it's not stringy and you don't get brown tips. Full of iron and like a salty Asparagus when boiled for just 2 minutes.

This sells in Selfridges for £100kg. We sell it for around half that as we're not on Oxford St. Mark cures this himself every Christmas and kindly drops us in a few sides. With soda bread and a slice of lemon it's hard to top.
